Ciento Cellars’ team is absurdly small, just Dave, Tonia, Jake and Oakley! In reality, though, we could never grow this beautiful fruit or craft these gorgeous wines alone.
First and foremost, we rely on the incredibly hard work of the Nevarez vineyard crews, led by second generation grape growers Mia and Juan Nevarez.
Second, but no less important, are the many grape growing and wine making mentors, teachers and friends from this incredible Paso Robles community.
Last, but not least, are our families and friends whose love and support keep us energized for the wine journey year around.
Dave Carpenter, Owner/Winemaker
Dave has been dreaming, thinking and planning for this epic second career for more than 20 years. He finally embarked on this winemaking adventure in 2018, following a 25-year career in investment management. Dave has spent the last five years honing his winemaking skills, starting with the two-year Winemaking Certificate Program at UC Davis. Dave complemented his book learning with incredible harvest internships, working for Anthony Yount at Denner, Stephan Asseo at L’Aventure, Guillaume Fabre at Clos Solene and Nick Elliott at Nicora. Dave owes an enormous debt of gratitude to each of these iconic winemakers for their teaching, patience and wisdom over the years.

Antonia Carpenter, Owner/Tasting Room Manager
Antonia is Dave’s “partner in wine” in this second chapter of their lives. She has patiently indulged Dave’s nurturing of this dream over the years, all the while keeping the home life with their twin boys, Sam and Diego, on an even keel. “Tonia” as she likes to be called is one of seven children from Boulder City, Nevada. She grew up working in her parents’ family business, a retail boutique specializing in Mexican and Native American art, jewelry and leather goods. Tonia’s Mexican heritage is the source for the philosophical, cultural and stylistic inspirations that are the foundation of Ciento Cellars. Tonia leads our efforts in the Tasting Room with her sparkling smile and effervescent personality.

Jake Jorgensen, Vineyard Manager / Asst Winemaker
Jake is the first (and currently, only!) employee hired by Ciento Cellars. Jake joined Ciento Cellars in 2023 after three years of vineyard and winemaking experience at L’Aventure winery in Paso Robles. Jake wears a lot of hats at Ciento, most importantly as Vineyard Manager and Assistant Winemaker. You will also occasionally catch Jake’s smiling face in the tasting room (if you’re lucky). Jake is a 2020 graduate of Cal Poly in San Luis Obispo with a B.S. in Ag Business.

Juan Nevarez, Founder, Nevarez Farm Labor
Juan Nevarez lived the American dream, emigrating to the U.S. in 1975 from Durango, Mexico. He started working in the fields at age 17 and worked his way up to crew boss by age 20. Juan started his own company, Nevarez Farm Labor in 1995 and bootstrapped his way up from a handful employees to an amazing 357 employees today. Juan sadly passed away in 2020, but his son Juan and daughter Eufemia picked up the reins and are now overseeing all aspects of the business. Ciento Cellars is in awe of the hard work of all the Nevarez employees. We couldn’t do it without you!
Oakley, Winery Pooch
Oakley is Ciento Cellars’ amazing winery pooch. He’s as mellow, loving and gentle as you can possibly imagine. He loves people, belly rubs and treats and is a Tasting Room guest favorite.
